One thing I love is the Cooking segment of her blog. Don't you just love how she showcases all of her ingredients?
So today, I thought I would share a recipe with you. It may be one you are already familiar with, but our family found it last summer when we were staying with some friends in Illinois.
It's a quick, easy hash brown potato recipe that makes lots for company and is great for a pot luck dinner.
The cast of characters (ingredients) -
Combine 2 cans Cream of Chicken soup with 3/4 cups sour cream and 1/4 cup mayonnaise.
Next chop onions and add to mixture.
Add the cheese
and half stick of butter (sliced thin)
Spray a large casserole dish with cooking spray.
Melt the other 1/2 of butter.
It should be about 2 cups. Spread corn flake mixture over the casserole.
After 60 minutes, take out of the oven and serve!

Hash Brown Casserole
Southern Style hash brown potatoes
1 stick butter
1 Tb minced onion, or 1/4 cup chopped fresh onion
2 cans Cream of Chicken Soup
3/4 cup Sour Cream
1/4 cup Mayonnaise
2 cups sharp grated cheese
2 cups Corn Flakes

Don't you just love these potatoes? In this part of the world they are called "Funeral Potatoes". Now that kind of bothers me, so at our house we call them "Cheesey Potatoes". Either way, they are so good!!!

I love all the step-by-step pictures! My stepmom makes this casserole all the time, but I don't know what she calls it. I think it's just "my cheesy hash brown casserole".

I've had this recipe and it is great for pot lucks. I've also had it with shreaded chicken and green chiles. Yummy!
Yumm! My version has one pound of bacon, cooked and crumbled, and no mayo. You don't have to thaw the potatoes, either, but we cook our batch for one hour, 20 minutes. Hmmm, I have all these ingredients now, come to think of it.... : } pokey

In our house those are cheesy potatoes and I LOVE them! Only I don't do cornflakes, I like them better without! Oh so yummy! If only it weren't so hot here I would go make some!
I love me some Pioneer Woman blog but man her recipes are loaded with ingredients I should really stay away from! Your recipe sounds good as well but again, the butter and sour cream..OY! Maybe I could take it to a potluck though.
